Contrary to popular belief, manicotti and cannelloni although similarly shaped are not interchangeable.

While both tubular, cannelloni are often extruded or rolled from semolina pasta and manicotti as the name suggests are cooked by hand "mano cotto" and are made from a savoury crêpe batter which is filled with spinach and fresh italian ricotta, then rolled by hand and baked in our rich a luscious marinara sauce, then dusted with Grana padano and fresh herbs.
