Contrary to popular belief, manicotti and cannelloni although similarly shaped are not interchangeable.
While both tubular, cannelloni are often extruded or rolled from semolina pasta and manicotti as the name suggests are cooked by hand "mano cotto" and are made from a savoury crêpe batter which is filled with spinach and fresh italian ricotta, then rolled by hand and baked.
Our rosé is inspired by the iconic NYC restaurant Carbone. Sweet calabrian and smoked chilis are flambéed with vodka then simmered with cream and our crushed tomatoes. Finished with fresh basil and herbs and a healthy hand of parmigiano.
